An Apple A Day

I have to admit. I'm kind of an apple snob. I hate mushy, soft apples. No Macintosh in this house! But I found an awesome idea to spruce up your every day apple snack!

Ingredients,
1 apple - pick your favourite variety, sliced so that it is round, make sure you cut out the core.
1-2 Tbsp smooth peanut butter
Handful of granola (you can substitute with nuts)
1 Tbsp coconut
A few chocolate chips

Once your apples are sliced and cored, spread the peanut butter over each piece of apple. Top with the granola, coconut and chocolate chips. Serve!

Grilled Mozza-tomato goodness

A new twist on a classic sandwich. Who doesn't love a good grilled cheese sandwich? I love them! But I wanted to see if I could find a healthier version to share with my family.... well I found it!

Ingredients
2 slices of bread (Fresh Italian is preferable)
3 slices of tomato
1/2 avocado 
1 package of fresh mozzarella (sliced to your preferred thickness)
Fresh Spinach
1 tbsp butter

Warm your skillet over low heat. Butter one side of your bread, place butter side down on skillet. Add a layer of tomatoes, mozzarella, avocado, and spinach. Place other slice of bread on top with butter side up. Cover and cook slowly until brown, then flip over. 
For an added taste, sprinkle a little balsamic vinegar on the sandwich.

Clean out the Fridge Soup

Yup, its soup week! But its cold, we've had a snow storm, and soup is always the warmest thing to have. It just makes you feel so good inside and out!
Ingredients:

3 Tbsp Butter
1 cooking onion, minced
2 Tbsp Chicken bouillion
2 Tbsp Flour
5 cups of water
3 carrots, diced small
6 potatoes diced small
1 cup diced spinach
1 cup broccoli diced small
1/2 cup corn
1 cup milk

In a large pot, melt butter, add minced onion, bouillion and carrots, let cook for a few minutes. Add the flour, let your roux cook for 2 minutes. Add the water slowly, stirring so there are no chunks. Add diced potatoes and let cook.

Add the broccoli, corn and spinach. Stirring them in. Combine the milk. Let stand, Salt and Pepper to taste.
With this vegetable soup, you can use just about any veg. Just clean out what you've got in your fridge and you'll have a yummy cream of vegetable soup.

Ham and Cheddar Chowder

This soup is a huge favourite in my house. My girls and hubby love it. Not to mention a few others!

Ingredients:

2 tbsp butter
1 cup onion minced

2 tbsp flour
1/2 tsp dill weed (fresh is nice)

2 cups chicken stock

2 cups potatoes diced into bite size pieces
2 cups of cheddar
1 cup milk
1 cup diced ham, bite size pieces

Melt butter in a large pot, add the onion and let cook for a about 5 minutes stirring often so they don't burn. Add the flour and dill weed, and form your roux. Let the roux cook for about 2 minutes. Add in the chicken stock slowly, whisking out any chunks.
Add the diced potatoes. Cook until the potatoes are tender. Add in the milk, cheddar and ham. Let cook through.
